what i did last time was open up sections one by one..... leaving the front empty... unless necessary...
cos most ppl prefer to sit at teh back.
seating wise, is all up to u...
and u must be able to do this all in a short time...
acknowledge the presence of the customer within 15 sec
greet within the next 15 sec.
n bring them to their seats within the next 30 sec =P
clear n set tables in 1 min =P (for places like pizza hut, sg u have to do this cos... sometimes.... ppl workin with u are eating snakes elsewhere) -
